19 Apr What I’ve Been Eating During Quarantine
Let’s be honest, one of the main things that I look forward to in a day in quarantine is eating. I’ve been sharing my recipes on my IG stories and have a saved highlight, but though I would compile some of my go-to recipes and share some of my tips around food in case you needed some inspiration during this time!
Breakfast
Not going to lie, the only breakfast that I eat is overnight oats. What I love about it is that it’s filling and it usually lasts me 4 days. It’s also a super customizable recipe, so you can swap ingredients and make it your own. It’s hard to mess this one up!
- Mix together and mash:
- 1 ripe banana
- 1 spoonful of coconut oil
- 1 spoonful of nut or seed butter (I use sunflower seed butter)
- Mix in:
- 3/4 cup old fashioned rolled oats
- 1/3 cup coconut flakes (I’ve been out of coconut flakes, so I’ve just been adding less water to the oats)
- 1-2 tbsp each of chia seeds, hemp seeds, and flax seeds *optional
- Add in between 1 and 1-1/4 cup of water and mix (you don’t want it too be too watery or too dry)
- Add in + mix well:
- 1 tsp vanilla extract
- 1 pinch salt
- 1-2 tsp cinnamon
- 3-4 tbsp cacao powder
- Fold in:
- 1/3 cup frozen blueberries
- 1/3 cup frozen raspberries
- Cover bowl with beeswax wrap and let sit overnight
- I usually like eating my oats warm, so I scoop out my portion for the morning in a bowl, heat it up in the microwave for a minute or so, and add my toppings 🙂
Topping ideas:
- Nuts
- Fruit
- Goji berries
- Yogurt
- Coconut butter
- Nut or seed butter
- Cacao nibs
- Pumpkin seeds

Baking
During quarantine, baking has been my therapy. Below I’ve listed out some of my favourite recipes (gluten-free, dairy-free – if any of them have eggs listed, I’ve subbed them for flax eggs)
- Zucchini Banana Bread Bars (I make them as muffins and skip the fancy chocolate sauce)
- Banana Oat Cookies (the BEST oat cookies I’ve ever made)
- Chocolate Coconut Flour Cookies (subbed the eggs for flax eggs and they were a little crumbly. Next time, I would increase the amount of flax eggs)
- 4 Ingredient Chocolate Brownies
- Chocolate Banana Sea Salt Balls
- Apple Fritters (I would suggest chopping up the apple super small. The quantities are best for a small/medium apple; for a larger apple, increase the other ingredients 1.5x)
- Gluten-Free Apple Crisp (amazing topped with Coconut Bliss vanilla ice cream)
- Blueberry Banana Muffin Top Breakfast Cookies (I swap the blueberries for chocolate chips)
Meals
Over the past couple of months, I’ve actually been meal prepping 2-3 meals to last me the week so I don’t eat out as much. These days, I still plan to make 3 main meals for the week, that way grocery shopping is easy and I don’t have to worry about cooking every night. Below you’ll find some of my favourite meals
- One Pot Creamy Mushroom Pasta (One of my all-time fave pasta recipes)
- Vegetarian Shepherd’s Pie
- Roasted Cauliflower Quinoa Salad with Lemon Tahini (I added in roasted sweet potatoes)
- Butternut Squash, Chickpea & Lentil Moroccan Stew (I swapped butternut squash for sweet potato)
- Sweet Potato Coconut Buckwheat Risotto
- Creamy Chicken And Vegetable Soup
- Vegan Coconut Lentil Soup
- Pesto Pasta (I use lentil or chickpea pasta)
- I usually have this on a weekly basis because it’s so easy to make and customize
- My go-to pesto ingredients are:
- Basil (I’ve swapped for parsley in the past when I’ve run out of basil)
- Raw spinach (could work with baby kale too)
- Hummus or avocado for creaminess
- Olive oil
- Lemon juice
- Salt
- Walnuts/cashews
- Hemp seeds
- Pumpkin seeds
- **Just remember to taste as you go and you can keep on tweaking it until you get your final product 🙂
- Add-ins:
- Roasted vegetables
- Bell peppers
- Zucchini
- Cherry tomatoes
- Mushrooms
- Cucumber
- Tomatoes
- Kalamata olives
- Steamed broccoli
- Ground or shredded chicken/turkey
- Roasted vegetables
- Good ol’ fashioned protein + vegetables + carbs
- Last week I had oven-baked salmon with roasted brussels sprouts and mashed potatoes
